Zucchini Chips

When you love veggies and you’re from the south, dropping veggies in a fryer just comes natural. Zucchini chips are a great way of substituting french fries when it’s burger night. Also an amazing snack for when you have friends over. Zucchinis have less calories than potatoes, and (almost) just as good. The perfect dipping sauce for these crispy veggies is chipotle ranch.

Serves: 4, Time: 20 minutes

– 2 zucchinis, cut into 1/2 inch slices
– 2 eggs, beaten
– 2 cups Zatarain’s fish fry
–1/2 cup olive oil or canola oil

Directions:

Coat each zucchini slice with egg, then press into Zatarain’s fish fry, coating both sides. Shake off excess and place the breaded zucchini onto a plate while breading the rest; do not stack. Heat oil in a large skillet over medium heat. Pan fry zucchini until crust browns and zucchini softens, about 3 minutes on each side. Serve with your favorite ranch.
