Meal Prep: What’s for Lunch Tomorrow?
When you live in a city like New York accessing lunch is never an issue. Every food genre and cuisine is just a Seamless click away. So finding food is never difficult, unless your boyfriend wants Thai and you want Mexican, in that case I can’t help you. Though it isn’t hard, it can be very expensive. One meal delivered from Seamless will run you about $15-$25 minimum. One trip to the grocery store will cost $80-$100 for 1-2 weeks. That’s $10 for three meals a day. Rushing out to work in the morning is almost an everyday thing for me; considering I share a bathroom with 2 roommates, and I take a local train to work. So, I choose to make my lunch the night before. Makes it easy for me to grab my self-made lululemon lunch bag before I start my commute.
Here’s what I’m taking for lunch tomorrow:
I was in the mood for fajitas. Trader Joe’s is the best place for grocery shopping in New York City. One because they have a great produce selection for a vegetarian like myself, and two it may be a bit crowded at times, because it’s the only location in the city; but the cleanliness and cool people are all worth it.
I started by sauteeing a bag of Trader Joe’s Fire Roasted Bell Peppers and Onions. The directions are on the bag, it’s not that hard to mess it up. Next, boil jasmine rice or use a rice cooker if you easily over cook rice like I do. While the rice is going boil canned black beans and corn. I mixed mine together and seasoned them with light salt and pepper. Leave the corn tortillas uncooked. Microwave them at work for about 10 secs, that’s all it really takes. A little cup of cheese on the side and it’s that simple.
