Take Your Pick: Bread or Muffins?
I’m not sure whether I’m in the nesting phase or if boredom is just setting in, either way my idle time has yielded some really tasty treats! I’ve always loved banana nut bread and making them into bite-size muffins made them even easier to devour.
Chocolate Chip Banana Nut Muffins/Bread:
2 Cups of Flour
1/2 Cup Butter (softened)
3 Tbsps. Milk
1 Cup Brown Sugar
2 Ripe Bananas (mashed)
1/2 Cup Walnuts (chopped)
1/2 Cup Chocolate Chips
Preheat oven to 350
Mix flour, butter and bananas
Stir in brown sugar, milk and eggs
Add chocolate chips and walnuts
Pour into oiled or non-stick muffin pan or loaf tin.
Bake for 30 minutes or until golden. Check center with a toothpick.
*Save some chocolate chips to sprinkle on top once the mixture is poured into the pan. Adding some on top will ensure melty goodness in every bite!
