Newly Vegetarian? Give Spinach Burgers a Try!
I recently became a pescatarian and I have enjoyed it. Now, I am slowly weaning myself off of fish as well. I find it the hardest to kick my cravings for burgers. About 4 months ago I would have loved a turkey burger with bacon, BBQ, and cheese. As I write this I am grossed out by the thought of it, but sometimes I have these random cravings. So I took to Pinterest, my favorite source for recipes, to find a veggie friendly burger. Spinach burgers came up first! They looked great from the picture and only needed a few ingredients, all of which I already had. I decided to try it out. They tasted as amazing as they looked!
Mix It All!
- 1 bag of thawed and well drained chopped spinach
- 2 egg whites
- 1 whole egg
- ¼ c diced onion
- ½ c shredded cheese
- ½ c bread crumbs
- 1 tsp red pepper flakes
- 1 tsp salt
- ½ tsp garlic powder
- Mix all ingredients in a bowl.
- Shape into patties and cook over medium high heat in a non stick skillet with a small amount of cooking spray.
- Patties are done when they are golden and firm. (About 4-6 minutes )
